Caprese salad is an Italian classic, three flavors that work so well together. Fresh mozzarella, basil and tomatoes. Its a fantastic dish to have in your mind for summer.
Its spring in Wellington, so I wanted a little bit of warmth in this dish. Working with the same flavors but done differently to make a warm salad. Take some tomatoes still on the vine. Put in a roasting dish and drizzle olive oil over, salt and a couple cloves of garlic. Roast in the oven at 140 degrees for 30 minutes. Slice the cheese then sprinkle basil under the tomatoes and on top. Give a good whack of sea salt to finish.
To take this salad from a side dish and make a great lunch for two, add some toasted bread and why not a beautiful steak topped with finely diced red onion, capers and olive oil sitting on some asparagus.
