Christmas is a day of over indulgence often in food, Christmas lunch is big in my family so breakfast usually a do it yourself or a simple dish, just cause it's simple doesn't mean it can't be delicious . I love to use fruit and meat together particularly during summer. It helps that my mother always has a very stocked fridge over the holiday season.

This Salad is Simple left over boiled Potatoes re-fried so they have a crisp crust on them, throw in some rosemary while you cook them mix with peach and Prosciutto. simple quick but an amazing blend of sweet, salt and savory.
